That is to say while it could be a problem with the way PS5 handles PS4 games (doubtful IMO because 99% of games are fine) I'm more inclined to believe that there are elements in the game that are misbehaving under circumstances that simply went untested on the original launch.

[Update 01/06/2022]: Assassin’s Creed Origins’ free 60FPS performance update for PS5 and Xbox Series X/S will be live tomorrow, June 2nd. Ubisoft has announced this update will be live on Thursday and will bring improved performance in the form of a 60FPS boost across each platform to all players.
Valhalla has a native Series X version with a 60fps mode. Odyssey got a patch for the Xbox One version to run at 60fps on Series X. If you run it on an Xbox One it is still 30. I specifically said "current gen consoles", meaning Xbox Series S/X and PS5, which have been out for a year and a half.
